Easy Cheat Pesto Shroom Pasta

Pesto is one of my favorite pasta sauces and I enjoy it best when I make my own but sometimes I don’t have the ingredients or the time and that’s where this dish comes handy. Here’s my pasta hack: store-bought pesto sauce, but make it high quality. (I love Gotham Greens pesto.) And mushrooms sautéed in pesto over pesto pasta. Easy peasy and so damn good!

Ingredients

Pasta of choice (I like Trader Joe’s lentil pasta)

2 cups mushrooms of your choice, sliced and wiped clean with a cloth or brush (never washed with water bc mushrooms are like sponges and will lose flavor)

1/2 tablespoon extra virgin olive oil

1/4 - 1/2 cup store-bought pesto

1/2 cup parmigiano reggiano cheese

Sea salt and black pepper to finish

Instructions

  1. Cook your pasta according to instructions on the package.

  2. In a medium pan, sauté the mushrooms in olive oil until tender. Then add in a tablespoon or two of pesto and continue sautéing for a minute. Turn of the heat and set aside.

  3. Once the pasta is cooked, strain and rinse under cool water. Place back in the pot you cooked the pasta in and mix in the rest of the pesto.

  4. Plate the pasta, add the mushrooms on top.

  5. Finish with fresh grated parmesan cheese, sea salt and pepper. Enjoy!
