Shaved Fennel Arugula Salad With Sardines
This simple, yet elegant salad is one you can quickly prep for a solo lunch or serve on a large platter for a dinner party. Not only is it pleasing on the eyes but it tastes delicious and is packed with nutrients.
Sardines are loaded with Omega-3 fatty acids, calcium, vitamin B-12 and potassium. I used canned sardines from Bela which are lightly smoked in cayenne pepper flavored extra virgin olive oil. The fennel adds complexity to the dish with its anise-like flavor. And avocados, which are packed with healthy fats and vitamins, add a delicate creaminess to the greens. Finish off with Parmesan which adds a slight nuttiness and capers for some saltiness and you have a complete balanced meal.
Ingredients
Bunch spinach
Bunch arugula
Fennel, thinly sliced or shaved using a mandolin
Shallots, thinly sliced
Shaved parmesan cheese
Bunch cilantro
Avocado
Radishes, thinly sliced
1 can sardines (Bela brand can be found at Whole Foods)
1 tbsp capers
Sea salt and pepper to taste
For the Dressing, mix the below ingredients together:
1/4 c extra virgin olive oil
1 tbsp dijon mustard
1-2 cloves garlic, minced
2 tbsp white balsamic vinegar
Sea salt and pepper to taste
Mix the salad ingredients together in a bowl (hold the sardines and capers till the end) and pour the dressing over. Toss the salad in the dressing and top with the sardines and capers. Et voilá!
