No Bake Pumpkin Spice Chocolate Chip Energy Bites

Pumpkin season is upon us and although it may seemed overhyped, trendy, and yes, basic —  this superfood has a TON of health benefits. Besides the fact that its freaking delicious, there’s good reason to include pumpkin in your diet. 

For starters, pumpkin is packed with antioxidants like vitamin c, which is known for supporting the immune system and boosting collagen production which means it’s great for your skin. Pumpkin is also very high in vitamin A which is beneficial for eye health. Pumpkin (and pumpkin seeds) also contains magnesium which most of us are deficient in. Since magnesium helps to create energy in the body as well as muscle relaxation, it can be helpful to eat pumpkin after an intense workout.  Plus it’s loaded with potassium, in fact more than a banana. Potassium  is necessary for muscle contraction, healthy blood pressure, and proper digestion.

These little oat nuggets are a great snack pre or post workout or when you’re craving something with a bit of sweetness. Packed with nutritious ingredients including omega-3 rich hemp hearts, collagen powder, fiber-rich oats, and of course pumpkin. Takes all of 5 minutes to make, easy to store and even easier to eat.

Ingredients

1/2 c pitted dates

1/4 c pumpking puree

1/4 c maple syrup

1 T Fat of The Land adaptogen honey (you can omit this if you don’t have)

1/4 c collagen powder

1-1/2 tsp pumpkin spice

2 c rolled oats

1/4 c hemp hearts

1/4 c raw pumpkin seeds

1/2 c chocolate chips 

2 T crunchy almond butter

Pinch sea salt

Instructions

Blend dates, pumpkin puree, maple syrup, honey, collagen powder, pumpkin spice and sea salt in a food processor along with 1/2 the rolled oats until fully combined.  

Add the rest of the ingredients and mix thoroughly using your hands. 

Roll into balls and enjoy! Keep them in a fridge for up to two weeks or freezer for 3 months.
